New Soybean Variety Contains Significantly Less Saturated Fat

A new high oleic soybean oil is now available from Minneapolis company Calyxt, Inc. This Calyxt soybean was created via the process of gene editing, in which scientists are able to quickly accomplish changes to the plant’s DNA that would otherwise require many years of conventional plant breeding.

The resultant oil contains significantly less saturated fat and three times more oleic acid than conventional soybean oil, which makes it more heat resistant, longer lasting and avoids the build-up of polymerized residues on commercial fryers that is difficult for restaurant workers to remove.
